End Grain (The Butcher Block)

  • Look: Distinctive "checkerboard" or mosaic pattern.
  • Best For: Heavy-duty chopping, mincing, and professional daily use.
  • Pros: Keeps knives sharper longer; "self-healing" surface hides cut marks; extremely durable.
  • Maintenance: Requires more frequent oiling to prevent drying out.

Edge Grain (The Classic Board)

  • Look: Long, continuous grain lines (classic "plank" look).
  • Best For: Slicing, serving, and general kitchen prep.
  • Pros: Lower maintenance (requires less oil); harder surface; often more affordable due to less labor-intensive construction.
  • Maintenance: Oil occasionally.
